Pinhook Bourbon War – 7 Year

The Pinhook Bourbon War series continues to be one of the most exciting large-scale experiments in the bourbon space and, with its 7th release, the sip has now climbed to 115 proof. This year, 130 barrels entered at 120 proof so the continued slow aging in brick and concrete should see it to the 12-year finish line.

Nose

This sip offers an enticing nose with a focus on warm spices like cinnamon and a light rye grain. There’s also a subtle hint of baking spice, light cinnamon raisin bread, and oak, with a faint touch of ethanol to round out the aroma.

Palate

Dry oak mingles with a range of spices, from mixed peppercorn to leather, and even a sharp Red Hots candy. Notes of lightly baked peach, fresh bread, light caramel chews, vanilla, and a notably spice-forward flavor finish combine for an inviting palate.

Finish

The sip ends with bold notes of cinnamon spice, rye spice, and oak. It’s accented with leather and a prominent long-lasting heat.
