Starlight Distillery, located in Borden, Indiana, calls Huber’s Orchard & Winery home. The farm, which started in 1843 when Simon Huber settled it, is today in it’s 7th generation of Hubers living and working on the farm. Along with growing various crops, the distillery also produces its own honey from bee hives. This particular whiskey was made by aging the bourbon in used bourbon barrels that had previously held Huber’s honey.
Nose
The honey influence is bold and highly noticeable, with wildflower honey as the dominant scent. Also present are baseline scents of vanilla, syrup, and a dab of oak. The overall aroma is very sweet, bordering on being sickly sweet.
Palate
Honey is again the star fielder on the palate, with sweet vanilla taking the second spot on the roster. There are also subtle touches of cinnamon spice and dry oak. Rye spice and a silky mouthfeel enhance the experience as the whiskey rolls across the tongue. Most importantly, there is a nice balance of spicy sweetness that helps the honey be more than a one note sensation.
Finish
The finish coats the palate with a mix of baking spices, light rye spice, fleeting honey, and lightly charred oak. Undulating heat lingers as an afterthought.
