When I first tasted Watershed Distillery Nocino Finished Bourbon in 2021, I was enthralled by its depth and complexity. This delicious whiskey is the result of being finished in nocino barrels, which are traditionally produced in Italy and are created with unripe walnuts still in their husks. Watershed Distillery creates their own version of nocino and finishes it in their used bourbon barrels. After tasting Batch 001, the distillery has continued to become more experienced and their newest release Batch 003 shows how far they have come.
Nose
The nose brings notes of brown sugar, coffee bean, molasses, and toasted walnut.
Palate
On the palate, walnut, cocoa, cedar, pomegranate, and slight clove are wrapped in dark brown sugar with a rich texture.
Finish
The finish has thick oak, a mix of nuts, coffee, pure maple syrup, and dark chocolate and lingers with a maple and oak aftertaste.
