Wolves Craft Distilling, an up-and-coming distillery from Los Angeles, California, has recently announced the release of their newest American Single Malt Lot Two. This special single malt whiskey has taken three years to perfect and is the result of experimentation with various roasted and smoked malts. Using Local Grains

Lot Two was created using locally sourced grains. It is a blend of 65 percent Munich malt, 10 percent chocolate malt, 15 percent roasted barley, and 10 percent smoked malt. Double Copper Pot Still Distillation

No Chill Filtration

Lot Two was created using a no-chill filtration process. This allowed for a more flavorful and intense whiskey experience. The no-chill filtration eliminates the chilling process which can strip the whiskey of its flavor and aroma. By avoiding this step, Wolves was able to create a whiskey that was more intense and flavorful.

Barrel Aging

Lot Two was then aged in small American oak barrels for three years. Wolves chose smaller barrels to increase the surface-to-liquid ratio. This allowed the whiskey to extract more of the flavor from the wood and create a more intense whiskey. Wolves also used a mix of both new and used barrels to create waves of caramel, vanilla, and smoke in the whiskey.

Tasting Notes

Lot Two has notes of sweet smoky flavor, with hints of char, roasted barley, and a hint of caramel. On the palate, you can taste hints of vanilla, leather, and caramel.
