Hirsch The Bivouac is a batched product that the brand says will be composed of approximately 160 barrels per batch. The combination of two Kentucky bourbons presents an easy to drink spirit with light vanilla, oak, and spice notes interwoven with summer fruits and peaches. However, what one gains in an easy drinking sip, one loses in depth.

Nose

Aromas include hay, oak, light vanilla, grain, hint of fresh peach, faint baking chocolate, and brightness.

Palate

Tastes of summer fruits, muted vanilla, light fresh oak, white peppercorn spice, and a straightforward sip.

Finish

The finish is oak-driven, with light rye spice, whiffs of cinnamon spice, faint vanilla, dab of peach, and a lingering light heat.

Overall

Straightforward and to the point, Hirsch the Bivouac delivered an easy drinking sip at the expense of providing any real depth. While incredibly easy to drink, future batches of Hirsch the Bivouac should look to add more depth to its sip.
