Forkish, a Portland-based baker and restaurateur, is the James Beard Award-winning founder and executive chef of Ken’s Artisan Bakery and Trifecta Tavern & Bakery. He is also the author of the acclaimed book Flour Water Salt Yeast: The Fundamentals of Artisan Bread and Pizza.

When Westward Whisky set out to create a truly unique whisky, they turned to Forkish for his knowledge and understanding of sourdough baking. After months of experimentations, the pair created Westward Sourdough Whisky, which is made from wheat, rye, oats and malted barley, and is aged in air-dried Oregon White Oak.
